Club MobiKitch
This was the first time that I worked with club MobiKitch. I was very nervous and anxious at the same time. The menu was a vegetarian menu and on paper seemed quite intimidating. We made a rice and grilled vegetable salad, a cabbage dish that was similar to sauerkraut, a grilled vegetable salad, olive platter and several variations of black and hibiscus tea. What I remember most about this event is learning to make and use rice as a salad option. I’d never heard of using rice in a salad but it was great. Chef Craig also introduced us to Charmoula sauce. Charmoula is a traditional Moroccan sauce, they use it on many things much the way we use ketchup. The sauce was very powerful in flavor and had garlic, smoke paprika, and ginger …some pretty dominate flavors. But when it was combined with the rest of the ingredients it was a wow moment for all of us. Chef Craig also helped us with learning to be efficient in the kitchen, efficiency of motion, and with knife skills. This was fun, enlightening, hard work, and a tremendous learning moment.
