I cook if I had those ingredients. Well, here was my chance to find out!! Our team decided to use the lentils in two preparations by combining them with the wild rice as the anchor side dish and also create a smooth puree to add a earthy and smoky component to the dish. Now to the pork…. I decided to marinate the pork in an herb spread composed of garlic, rosemary, thyme, and olive oil. The pork was then roasted in the oven. All of the components of the dish were coming together great but we needed to do something that would set us apart. I created a raspberry chipotle glaze as a sauce for the plate that would give a fruity, sweet, and spicy kick to the dish. It was really good and our team was very proud that we won!!!!
