Conch?! What the heck is that? Lol…Today we had the chance to
experience something very different, Conch. This is a sea mollusk that has a very unique flavor and can sometimes be very tough and chewy if not prepared correctly. Chef went through with us how to clean and tenderize the conch as we prepared it for the Conch chowder. We also had “swamp cabbage” in a salad. Swamp cabbage is a name used for “hearts of palm”. It is very expensive and has an interesting briny flavor. One of the things I most enjoyed about the menu to day was the Key Lime Pie….mmmmmmmmm.. is all I have to say about that. Very interesting
