Day 2 of Cuisine of the South we had to produce several items
that varied in their influence. We prepared Hoppin John, Vidalia Onion Tarts,
Shrimp Perloo, and Banana pudding. Time Management!!! On day 1 of this adventure to the south our team was really behind the eight ball. We were working, but not efficiently. We also had issues with cleanliness on day 1.
Today Chef Rick said we are playing a new game called Plate or Pitch. The object of this game is for our teams to accomplish as much as we could and the items that we did not finish by plating time had to be thrown out or “pitched”. The game did exactly what Chef wanted. It caused us to consider what items we could accomplish and what items needed to be assigned to someone else. I had a ball creating the onion tart and the banana pudding. I did my absolute best to manage the clock and not allow the clock to manage me.
