Chicken and Andouille Sausage Gumbo

Today was the first day of Mid-term practical. We each had to prepare two dishes individually and then one team dish. Talk about tuff!!! Chef spoke to us about the difference between Cajun and Creole Cuisines. We learned about the regional ingredients such as alligator, crawfish, file powder, and the holy trinity (the regions rift on mire poix). One of the items that we discussed in depth was Gumbo. We learned that the state of Louisiana is often described as the
"cultural gumbo". We took on the challenge of preparing a dark mahogany roux and avoiding a black roux. It is interesting that something as simple as flour and fat could create such depth of flavor. Once we had accomplished getting the roux to the correct color stage it was critical that we moved very quickly to add the other ingredients in the correct order to prevent ruining the dish. Although gumbo is labor intensive the payoff was big! The layers and balance of flavors were a huge reward for all of the stirring! If you need to build some muscle and get those biceps tight...make some gumbo...lol
